Home cooked dinners don’t need to be fussy and expensive. They can be much cheaper than a take away and a lot less fuss than you think.

I think it’s great when Chiefs release simplified meals and 15 minute meals. But I’m no chief and TBH I’m hardly even a cook. So I can still find some of the recipes complicated and it always takes me more than 15 minutes to make dinner.

I thought, I can’t be the only one who wants to eat well on a budget and is a bit rubbish in the kitchen. Sometimes we just need a few ideas thrown at us.

Don’t worry I won’t have you starving, I have discovered a few meals along the way.

Super Simple Roast Chicken Dinner

Now this is just a family classic and so easy to make. With my chicken dinner there’s less fuss and less trimmings. That way you don’t need to buy a million vegetables, having to peel for hours only to put most in the bin.

What’s on your plate Cost
Medium whole chicken £3.50
Peas (from frozen) Approx £1.60 a bag or 16p per potion
Carrots (from fresh) Approx. 7p each
Potato Approx. 33p each
Gravy £1 or 10p per serving


For a family of 4 this would come to £5.84

Method

  1. First, put your chicken in the oven for approximately 1 hour 30 minutes.
  2. When there’s 30 minutes to go on the chicken you need to start on the potatoes.
  3. For super ease you can put these in the microwave. Have one potato per person and pierce the skin in a few places. Wrap the potato in kitchen roll or cling film and pop in the microwave.
  4. Next cut a carrot per person and place into a pan with boiling water. Carrots need longer than other vegetables to soften up. 5 minutes later add broccoli and then another 5 minutes later add your peas.
  5. In this time your potato will have finished. You can have jacket potato with your dinner or you can scoop the contents into a bowl, add butter and mix together.  chicken
  6. Make some gravy.
  7. You’re ready to serve!

 

 

Coconut chicken with Rice

This sounds exotic and it is, but it’s also super easy to make. I found this recipe on the back on a can of coconut milk and it’s come good ever since.

What’s on your plate Cost
Chicken (breast fillets from frozen) £3.50
Can of Coconut Milk 99p
Red Pepper Approx. 40p
Corn on the cob (from frozen)  £1.50 a bag 15p per potion
Rice  75p a bag or 5p per potion


For a family of 4 this would come to £5.69

Method

  1. Take your chicken out of the freezer and defrost in the fridge the night before cooking.
  2. Dice your chicken breast and marinate with chicken seasoning or anything you fancy.
  3. Then in a large frying pan with some oil, add your chicken and stir until sealed (the outside of the chicken is white). curry
  4. Now add rice to your pan of water and simmer for 10-15 minutes.
  5. Next, add your chopped red pepper to your chicken.
  6. Place your corn on the cob pieces in a pan of hot water for 5-10 minutes.
  7. Back to your chicken, now add a can of coconut milk.
  8. Stir together your chicken, peppers and coconut milk.
  9. Then leave to simmer for 10 minutes.
  10. Now everything should now be ready at approximately the same time.

 

 

 

Quorn Bolognese and Pasta

This sounds exotic and it is, but it’s also super easy to make. I found this recipe on the back on a can of coconut milk and it’s come good ever since.

This is one of my favourites. It’s so convenient since you can cook quorn mince straight from the freezer. I’m not veggi so I like to add a beef stock cube for extra flavour, but you really don’t have to. You can also add onions and garlic to this if you wish. Quorn is also very low in fat and high in protein. If you’ve never tried quorn before I really recommend you do.

This is also a dish I like to make a lot of in one go, so I can put some in the fridge for an easy dinner the next day.

Can of tomato soup 99p
Can of tomatoes 95p
Red Pepper  Approx. 40p
Pasta  56p a bag or 8p per potion


For a family of 4 this would come to £5.38

Method

  1. Add pasta to a pan of hot water.
  2. Then add quorn mince to a hot pan with oil and stir. It will start to break up as it defrosts. so at this point you can add any seasoning or stock cube.
  3. Once the quorn  broken up and on its way to being cooked, add your cans of tomato soup and tomatoes and stir together.
  4. Next, add your chopped red pepper (small chunks).     oasta
  5. Stir everything together and then simmer for 5-10 minutes.
  6. Quorn cooks in about 10-12 minutes so you shouldn’t undercook it.
  7. Now drain off your pasta and place back into the pan.
  8. Then add your bolognese to the pasta and mix together.
  9. You’re ready to serve!
