Triple Chocolate Cookies

    The kids love making these as much as eating them.

    Ingredients needed:

    * 225g / 8oz softened butter
    * 140g / 5oz caster sugar
    * 1 lightly beaten egg yolk
    * 2tsp vanilla extract
    * 225g / 8oz plain flour
    * 55g / 2oz cocoa powder
    * pinch of salt
    * 85g / 3oz milk chocolate chips
    * 85g / 3oz dazrk chocolate chips
    * 115g / 4oz plain chocolate, roughly chopped

    Makes: 12

    Prep Time: 15 minutes

    Cook Time: 12-15 minutes


    * Preheat oven to 190*c / Gas mark 5. Line up to 3 baking trays with greaseproof paper.

    * Place butter and sugar into a bowl and mix well. Beat in the egg and vanilla extract.

    * Sift the flour, cocoa powder and salt into the mixture. Add the chocolate chips and stir thoroughly.

    * Make 12 balls out of the mixture, place onto the baking paper making sure to leave plenty of space between each one. Flatten them slightly.

    * Press the plain chocolate into the cookie mixture balls.

    * Bake in a preheated oven for 12-15 minutes. Leave to cool before serving.
