Vegetarian Chickpea Patties

These vegetarian chickpea patties are a great alternative to a meat main course, impress your vegetarian friends with this simple dish. You may find that you’ll be tucking in too!
 INGREDIENTS
2 x 400g cans chickpeas
4 garlic cloves, crushed
1tsp ground cumin
1 small red onion, chopped
1 small red onion
20g pack fresh coriander
2tbsp plain flour
Olive oil for frying
METHOD
1. Drain and rinse the chickpeas, then pat them dry with kitchen paper. Put them into a food processor with the garlic, cumin, onion and coriander. Blend until smooth, then stir in the flour.
2. With floured hands, shape the chickpea mixture into 12 small round patties and chill in the fridge for 20 min.
3. Heat a little oil in a nonstick frying pan over a medium heat and fry the patties in batches for about 2 min on each side or until heated through and golden. Serve warm with parsley sprigs and lemon wedges, or if making ahead, cook the patties the day before. Cool on a foil-covered baking sheet, then cover loosely with foil to chill. If freezing, cool in a freezer proof container and freeze.
4. To use from chilled, leave on the baking sheet, still covered, and cook in the oven for 20min. To use from frozen, thaw overnight at cool room temperature and reheat as above.
These Patties are an ideal alternative to meat if you are a vegetarian or these could equally accompany a meat dish,they are also gluten free.
