Coconut Chicken- Weaned baby

• 1 boneless, skinless chicken breast

• 2fl oz coconut milk

• 2tbsp breadcrumbs

• 2tsp coconut, shredded

• Knob of butter


• Preheat the oven to 190*C. Place the chicken into a bowl and pour over the coconut milk. Marinate in the fridge for a few hours.

• Place the breadcrumbs and coconut into a bowl and mix. Remove the chicken from the coconut milk and coat in the breadcrumb mix.

• Place this coated chicken back into the coconut milk with the butter on top and pop into the oven for 45mins until cooked.

• Serve when cool.
