Fish Pie with Peas

Written by:

Fish pie is easy cook, can be cheap to make and nutritional. You can buy fish pie mix already cut for you at your local fishmonger or supermarket. Buy fresh instead of frozen or you will end up with a fish pie full of water.  This fish pie contains fish, leeks, milk and potatoes which makes a filling dish.I love to sprinkle my fish pie with grated strong cheddar and served with steamed greens.

Prep time: 30minutes

Cook time: 30minutes

Total time: 1 hour

Serves: 4

250ml of whole milk (plus 2tbsp for potatoes)

250ml of fish stock

350g of fish pieces – cod, salmon and haddock are ideal

750g of creamed mashed potato – warmed

1 bay leaf

1 medium leek – washed and finely sliced

55g of butter

55g of plain four

Salt and pepper

Grated cheddar (optional)

1tbsp parsley – finely chopped

1) Preheat your oven to 180*C. In a large pan pour in your milk and fish stock and gently simmer before adding the bay leaf and fish mix. Poach for 5 minutes. Remove the fish pieces and set aside.

2) In another medium pan melt the butter and add the leeks, cook for 5 minutes until softened. Now add the flour and stir well with a wooden spoon. Take the milk that the fish was poached in and pour into the leek and flour mix, stir thoroughly. Slightly raise the temperature and cook for 3minutes until the sauce has thickened slightly. Turn off the heat and remove the bay leaf, add the fish and chopped parsley and season with salt and pepper.

3) Place this mixture into an ovenproof dish and smother with the creamed mashed potato. Use a fork and make soft peaks in the mashed potato. Add the cheese (optional). Cook in the centre of the oven for 20-30minutes. Serve immediately.
