Healthy & delicious Snickers icecream (vegan)

This raw snickers icecream (or ‘nice’ cream!) is bound to be a hit for all the family. Not only is it sweet and creamy, but it’s actually good for you –  yes, you read that correctly – it is healthy! If you’re not keen on nuts (or can’t have them) just don’t add the peanut butter and you’ll still be left with a healthy and tasty chocolate and caramel icecream treat! Here’s how to do it:snickers icecream

INGREDIENTS

5 frozen bananas

6 medjool dates

1/2 tsp vanilla extract

1/4 tsp Himalayan salt

1/2 cup of water

1 1/2 tbsp peanut butter (no added salt)

1 tbsp cacao powder

2 tbsp 100% pure maple syrup

HOW TO MAKE

  • Peel and chop the banana into small chunks, add to the freezer for a minimum of four hours
  • Meanwhile you can prepare the sauces: firstly add the dates, salt, vanilla and water to a high speed blender and blend until you have a smooth consistency. If the sauce is a little thick then you can add tiny amounts of water until it’s perfect. Set to one side
  • To prepare the chocolate sauce all you need to do is mix the cacao with the maple syrup in a small bowl using either a mini whisk or fork. And again set to one side
  • Take the bananas out of the freezer, place into a high speed blender and blend until creamy
  • Once blended, gently stir in one tbsp of the peanut butter and a quarter to half of the caramel sauce (depending on your taste)
  • Put in desired bowl, drizzle on remaining caramel sauce, the chocolate sauce and the remaining peanut butter and serve

TOP TIP

If you find your blender is not powerful enough to blend the bananas with ease, leave the bananas to slightly defrost for 5-8 minutes and try again
