We do love Jamie Oliver, especially because of the hard work he has put into educating children, parents and schools over the last few years. We have tried and tested this recipe out and it is a huge hit with children and they really enjoy helping out in the kitchen with this too. It’s a quick, easy-to-do meal for when you’re in a hurry. And yes, quite possibly the children enjoyed themselves more knowing the end result would be a delicious vegetarian pizza….

Makes: 6

Prep time: 20-25 minutes

Cooking time: 10-15mins

Vegetarian pizza ingredients:

225g strong plain flour

1tsp dried yeast

1tbsp olive oil

150ml warm water

Extra flour for kneading

Olive oil for greasing and drizzling

6 heaped tsp of pesto

125g mozzarella cheese

10-12 small mushrooms

1 small red pepper

Cooking utensils:

Sieve

mixing bowl and damp cloth

teaspoon

tablespoon on measuring jug

cutlery knife

plastic bag

kitchen towel and baking sheet

chopping board

small vegetable knife

Method:

1) Set the oven to 220*C/gas mark 7. Sift the flour into a bowl and add the yeast. Use your fingers to make a well in the centre of the flour and add the olive oil. Add the olive oil and slowly add the warm water and mix into a dough with the cutlery knife. Use one hand to bring the dough together, wipe the dough around your bowl to clean it.

2) Sift some flour onto a clean smooth surface and knead the dough by pushing and pulling it around the palm of your hand. Need your dough for 10 minutes until it feels really stretchy like elastic. Grease the bowl and put the dough inside it, cover it with a plastic bag and leave in a warm place for an hour. It will swell twice as big.

3) Knead the dough again for 2 – 3 minutes and divided into six balls. Shape and flatten them into 10cm circles and place them on a baking tray.

4) Spread a teaspoon of the pesto onto the top of each pizza, cut the mozzarella into pieces and sprinkle over the pizzas. Wipe 6 – 8 small mushrooms with the kitchen towel, slice thinly and scatter them on the pizzas. Drizzle a little olive oil over the mushrooms then chop up the red pepper and sprinkle onto the pizzas.

5) Put the pizzas on the other side, near the top 10 – 12 minutes until the cheese is melted and the pizzas are golden brown.
