Do you find most sponge cake recipes seem really dry? Especially muffins, cupcakes and Victoria sandwich?

I have never seem to be able to buy or bake a sponge that is light, yet still moist and tasty at the same time. Over the years I have looked at thousands of different recipes on the Internet and in baking books but to be honest they were all very similar and still didn’t help to produce a moist sponge.

I was flicking through a magazine and came across this recipe for a sponge, it’s not too dissimilar from the others I had looked at, but this one contained fresh orange juice, which sounded lovely. With the added juice I thought this would give the cake a moist texture and believe me it did!

Not only was the cake moist, but also it lasted for days without being dry. I have since used this recipe for cupcakes, birthday cakes and other celebration cakes. Over time I have tweaked it further and also added cocoa powder to create a chocolate orange cake, and covered it with chocolate, which makes it even more amazing!

You can also use lemons instead of orange for a change, and use lemon curd for the filling.

Ingredients:

7oz Golden Caster Sugar

7oz Butter

7oz Self Raising flour

4 Large Eggs (beaten)

1tsp Baking Powder

Zest and the juice of 1 1/2 Oranges

Method:

1. Pre-heat oven on gas 4, 160-180 for a fan oven

2. Beat the butter and sugar with an electric whisk for 5 mins

3. Gradually add eggs, beating between each addition

4. Fold in the flour and baking powder with a metal spoon, then add the orange zest and juice

5. Divide the mixture between two 20 cm tins and bake for approx. 20 mins until springy.

6. Leave to cool for 5 mins then place onto a wire rack.

Fill with whichever filling you prefer.

Homemade sponge cake

I have made one using a heart shaped tin, I put the full mixture in the one tin, it does take a little longer to cook so remember to keep checking it!! When cool I sliced it into half, then I filled with apricot jam and covered with melted chocolate and decorated.
