One pot spicy beef

An easy all-in-one beef and veg main course that can be served with rice or tortillas. One pot spicy beef is a great, fast main that can be doubled in size to save some for later in the week.
INGREDIENTS
2tsp sunflower oil
1 large onion, roughly chopped
1 garlic clove, finely chopped
1 small red chilli, finely chopped
2 red peppers, roughly chopped
2 celery sticks, diced
400g (14oz) lean beef mince
400g can chopped tomatoes
2 x 400g cans mixed beans, drained
1–2tsp Tabasco
METHOD
1.Heat oil in a large frying pan. Add onion to the pan with 2tbsp water. Cook for 10min until softened. Add the garlic and chilli and cook for a further 1–2min until golden. Add the pepper and celery and cook for 5min.
2.Add the beef to the pan and brown all over. Add the canned tomatoes, mixed beans and the Tabasco, then simmer for 20min. Serve with: a soft flour tortilla or basmati rice – 50g (2oz) per person – cooked according to the packet instructions
