Transform your boring old spuds into a lavish picnic feast, potato salad is quick to make and absolutely delicious.

Potato salad ingredients:

1tbsp tarragon or cider vinegar

2tsp Dijon mustard

2tbsp olive oil

2tbsp walnut oil

1tsp honey

salt and pepper

900g/2lb new potatoes, Jersey Royals or Charlotte, washed and scrubbed

1tbsp tarragon leaves, chopped

1 large shallot, finely chopped

2tbsp gherkins, chopped

Prep time: 30 minutes

Cooking time: 10-20 minutes

Serves: 4-6


1) Place the vinegar, mustard, oils, honey plus salt and pepper into blender. Blend until creamy, adding more seasoning if required.

2) Cook the potatoes in salted boiling water for about 15 minutes until tender, Drain and when cool to the touch cut into halves.

3) Place the cut potatoes into a bowl, add the tarragon, shallots and gherkins and as much dressing as you like.

Serve warm if eating straight away or pop in the fridge for later to add to your picnic.
