Pork Casserole

A delicious pork casserole that takes just 15 minutes to prepare. Serve with creamy mash to soak up all of the mustard sauce!


1tbsp olive oil

2 onions, chopped

1.4kg (3lb) belly of pork, fat removed, cut into eight strips

3tbsp Dijon mustard

250g (9oz) button mushrooms, halved

300ml (½ pint) vegetable stock

A handful of spring greens, chopped.


1. Heat the oil in a large pan over a medium heat. Add the onions to the pan and fry for 8–10 min until they turn soft and golden.

2. Smear the pork with the mustard. Push the onions to one side of the pan and add the pork. Fry for 10–15 min until the meat is browned all over.

3. Add the mushrooms and stock, then cover and cook for 30 min. Add the spring greens and simmer for 5 min before serving with mashed potato. Set half aside to freeze.
