Spicy Chicken Noodle Soup

This spicy chicken noodle soup is quick and easy but extremely tasty.  We loved it so much we had it for dinner every night for a week!

900mls Vegetable Stock

2 small chicken breasts (chopped)

1 tsp fresh Root Ginger (finely chopped)

1 Garlic Clove

50g Wheat Noodles

2 tbsp Sweetcorn (tinned or frozen is fine)

5 Mushrooms (thinly sliced)

3 Spring Onions (chopped)

2 tsps Soy Sauce

½ Red Chilli


-Pour the stock into a large saucepan and add the chicken, garlic and ginger.  Bring to the boil then turn down the heat and simmer for 20 minutes.

-Add the noodles, sweetcorn, mushrooms, spring onions, chilli and soy sauce and simmer for another 5 minutes and then you’re done!


This soup is filling enough that you don’t need any accompaniment but if you do decide you need a little extra a toasted baguette soaks this delicious soup up perfectly.
