Stuffed peppers are really healthy and  great as a side dish or as a main meal. Suitable for vegans and vegetarians too.

INGREDIENTS

1 small red onion, finely chopped
1 celery stick, finely chopped
3–4 thyme sprigs
2 each red and yellow peppers, halved and de-seeded

 

METHOD

1. Preheat the oven to 200°C (180°C fan) mark 6. Put the Riso Gallo 3 Grains into a pan and add the stock. Cover, bring to the boil, turn the heat to its lowest setting and simmer for 20 min.

2. Meanwhile, heat the olive oil in a pan and cook the chopped onion and celery over a low heat for 10–15 min until softened.

3. Add the onion and celery to the rice. Strip the leaves from the thyme and stir everything together.

4. Divide the mixture among the peppers and put them into a roasting tin. Drizzle with a little oil and roast for 30–40 min until the peppers are tender. Serve with roast chicken or pork.
