We try Nigella’s Coconut Macaroons

I have to admit to being rather partial to the odd coconut macaroon so I’m always on the look out for the perfect recipe and this is my favourite.  Trust the Domestic Goddess to make the perfect macaroons hey?

These marvellous macaroons take no time to make and you can even get the kids involved so a nice recipe for those cold winter afternoons.

Ready In

Ingredients

2 large egg whites

¼ teaspoon cream of tartar

30 grams ground almonds

100 grams caster sugar

A pinch of salt

1 teaspoon of vanilla extract

250 grams shredded coconut

 

Method

Pre-heat the oven to 170ºC/gas mark 3/325ºF.

Beat the eggs until frothy, then add the cream of tartar and continue beating until you have soft peaks. Add the sugar a teaspoon at a time and whisk until the peaks hold their shape. Then fold in the almonds, vanilla, salt and coconut.

This bit is a little sticky and messy so kids will love it! Form small round balls and place on a greased/lined baking tray, you may want to pat them down a little to get your desired shape but don’t over do it – who wants to eat a flat macaroon?

Cook until the macaroons turn golden just around the edge. This is usually around 20-23 minutes.

You can decorate your macaroons by melting a little dark chocolate and swirling over them and leaving to cool/set or leave plain, they are tasty enough to leave out the chocolate.
