Vegetable Biryani

This is a deliciously mild spiced vegetable biryani that can be served as a main meal or as accompaniment to your meal.

Total time: 1 hour 5minutes
Serves: 4
Ingredients:
1 large yellow pepper – deseeded and cut into chunks
1 beef tomato – deseeded and cut into chunks
1 large red onion – peeled and cut into wedges
1 courgette – thinly sliced
2 garlic cloves – leave skins on
2tbsp of extra virgin olive oil
125g of Basmati rice – washed with cold water
2tbsp of mild curry paste
1 star anise
500ml of hot vegetable stock
2tbsp of flat parsley – chopped
2tbsp of coriander – chopped
Salt and pepper
Method:
1) Preheat the oven to 190*C/Gas mark 5. Place the vegetables into a large roasting tin and drizzle the oil over the top. Mix thoroughly and makes sure you have coated all the veg.
2) Cook in the hot oven for 20minutes until the vegetables start to turn brown.
3) When cooked stir in the curry paste, stock, star of anise, turmeric and rice. Cook for a further 20-30minutes until the stock and absorbed completely.
4) Stir in the herbs and serve immediately.
