Warming vegetable minestrone-this healthy one-pot wonder works with any root vegetables you have lying around.

INGREDIENTS

1 onion, roughly chopped
2 celery sticks, roughly chopped
4 small carrots, roughly chopped
1tbsp vegetable oil
400g tin chopped tomatoes
1.4 litres (2½ pints) vegetable stock
125g (4oz) spaghetti, broken into small pieces
410g tin cannellini beans, drained and rinsed
150g (5oz) frozen peas
Small handful fresh basil, to garnish

METHOD

1.Pulse onion, celery and carrots in a food processor until chopped to the size of peas. Heat the oil in a large pan and fry the chopped vegetables over a medium heat for 10 min until soft. Add the tomatoes and stock and bring to a simmer.

2.Mix in the spaghetti and simmer for 10 min, adding the beans and peas for the final 3 min. Check the seasoning and ladle into soup bowls. Garnish with basil and serve with crusty bread, if you like.
